BACON EGG & HASH BROWN CASSEROLE

Ingredients :
  • one bag thirty ounces Tater Tots (or hashbrown potatoes)
  • half tablespoon vegetable oil
  • six eggs Salt and pepper
  • two c grated cheese
  • 3/4 cup (one hundred ninety mL) bacon bits (cooked)
  • 3/4 c (190 ml) sausage pieces

 

Methods  :
Preheat the oven to four hundred twenty five °F (two hundred eighty °C). Spread the potatoes in the bottom of a twelve inch cast iron pan. Make a rim with the potatoes all around the pan. Cook for fifteen minutes. Meanwhile, heat the oil in a saucepan over medium heat. Beat the eggs, season with salt and pepper and scramble them in the pan, without overcooking them. Remove from the oven and use a spatula to press the potatoes down well. Add one cup of cheddar cheese. Add eggs, sausage and remaining cheddar cheese. Sprinkle with bacon. Cook for another ten minutes. To serve!
