Beef Tips with Mushroom Gravy

Ingredients:
- 2 pounds cubed chuck roast or stew meat
- 2 tablespoons all-purpose flour
- 1 shallot, diced
- 3 tablespoons butter
- 8 ounces sliced baby Bella mushrooms
- 1 teaspoon Worcestershire sauce
- 1 bay leaf
- 1/2 teaspoon sugar
- 1/4 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon onion powder
- 1 teaspoon mushroom powder
- 1/4 cup thinly sliced pepperoncini peppers
- 2 cups beef broth
- 2 tablespoons water mixed with cornstarch
Instructions:
Slow Cooker Method:
- Place all ingredients except flour and cornstarch mixture in the slow cooker. Add beef broth and stir to combine.
- Cook on high for 3-4 hours or low for 5-7 hours.
- Thirty minutes before serving, mix cornstarch with liquid from the slow cooker until smooth. Return mixture to the slow cooker, stir well, and cook for an additional 30 minutes to thicken.
- If gravy is too thick, add water to thin it out. Season with salt and pepper to taste.
- Serve over steamed rice, fried egg noodles, or mashed potatoes.
Instant Pot Method:
- In the Instant Pot, combine 1 ½ cups beef stock with all ingredients except cornstarch mixture. Ensure meat is well covered with liquid.
- Cook on high pressure using the meat/stew setting for 35 minutes. Allow pressure to release naturally for 10-15 minutes.
- Switch to "sauté" mode. When liquid starts to bubble, add cornstarch mixture and stir continuously for 1-2 minutes until sauce thickens.
- If needed, add more water to adjust gravy consistency. Season with salt and pepper.
- Serve over your preferred base.
