Southern Style Green Beans and Red Potatoes
I can't wait for dinner tonight!!! I want fresh green beans like my grandmother used to make!!!
Ingredients:
- 1 cup of fresh green beans
- 1 quart of red potatoes or 4 potatoes cut into quarters
- 1/4 of an onion, chopped
- 1 chicken or beef broth cube
- Three pieces of bacon
- 1 teaspoon Pampered Chef garlic herb spice (optional) or 1/4 tsp garlic
- 1/2 teaspoon of pepper
- Salt to taste
- 2 cups of water (or enough to cover the beans and potatoes)
Instructions:
- Prepare Ingredients:
- Begin by chopping the onion and cutting the red potatoes into quarters.
- Cook the Bacon and Onions:
- Fry the bacon in a large pot until it’s crispy. Remove and set aside.
- In the same pot, sauté the chopped onions in the bacon grease until they are translucent.
- Add Remaining Ingredients:
- Add the fresh green beans, quartered red potatoes, chicken or beef broth cube, garlic herb spice (if using), pepper, and salt to the pot.
- Pour in enough water to cover the beans and potatoes.
- Simmer:
- Bring the mixture to a boil, then reduce the heat to a simmer.
- Let it cook for at least an hour, stirring occasionally. For an even richer flavor, let it simmer longer.
- Finish and Serve:
- Crumble the cooked bacon and sprinkle it over the top before serving.
