Ingredients:
- 1 lb lean ground beef
- 1 packet (1 oz) taco seasoning
- 1/2 cup water
- 6 medium flour tortillas
- 1 can (16 oz) refried beans
- 1 can (10 oz) red enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper-jack cheese
- 1 Roma tomato, diced
- 1 green onion, diced
- 1 small can sliced black olives
Instructions:

Preheat oven to 375°F (190°C). Lightly spray two baking sheets and place three tortillas on each. Bake for 3–5 minutes, flip, then bake another 2–5 minutes until golden and crispy. Set aside.

Cook the ground beef. In a skillet, cook and crumble beef over medium-high heat until browned. Drain grease.

Season the beef. Stir in taco seasoning and 1/2 cup water. Bring to a boil, then simmer for 10 minutes. Set aside.

Warm the beans. Microwave the refried beans until spreadable.

Assemble the base. Spread a layer of refried beans on one crispy tortilla. Top with 1/3 of the taco meat. Place another tortilla on top.
