Craving those cheesy, beefy, crispy layers like your favorite Mexican Pizza from the drive-thru? This homemade version delivers major flavor with simple ingredients, a crispy tortilla crust, and melty cheese in every bite. Perfect for busy weeknights, game day, or when that taco-meets-pizza craving hits!

 Mexican Pizza Recipe

Yield: 3 Mexican pizzas (serves 4–6)

 Ingredients:

  • 1 lb lean ground beef
  • 1 packet (1 oz) taco seasoning
  • 1/2 cup water
  • 6 medium flour tortillas
  • 1 can (16 oz) refried beans
  • 1 can (10 oz) red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato, diced
  • 1 green onion, diced
  • 1 small can sliced black olives

 Instructions:

  1. Preheat oven to 375°F (190°C). Lightly spray two baking sheets and place three tortillas on each. Bake for 3–5 minutes, flip, then bake another 2–5 minutes until golden and crispy. Set aside.

  2. Cook the ground beef. In a skillet, cook and crumble beef over medium-high heat until browned. Drain grease.

  3. Season the beef. Stir in taco seasoning and 1/2 cup water. Bring to a boil, then simmer for 10 minutes. Set aside.

  4. Warm the beans. Microwave the refried beans until spreadable.

  5. Assemble the base. Spread a layer of refried beans on one crispy tortilla. Top with 1/3 of the taco meat. Place another tortilla on top.

  6. Top it off. Spread 3 tablespoons enchilada sauce on the top tortilla. Sprinkle with cheddar and pepper-jack cheeses.

  7. Add fresh toppings. Scatter diced tomato, green onion, and black olives on top.

  8. Repeat the stack. Do the same for the remaining ingredients to make 3 pizzas.

  9. Final bake. Return pizzas to oven for 5–7 minutes, or until the cheese is bubbly and melty.

  10. Cool slightly, slice, and serve!

Tips:

  • Want it spicy? Add sliced jalapeños or a drizzle of hot sauce before baking.

  • Swap the beef with seasoned black beans or shredded chicken for a twist.

  • Serve with sour cream, guacamole, or a squeeze of lime on the side.
