Looking for a cozy, hearty meal that comes together in a flash? This Busy Day Soup is the ultimate weeknight savior. It’s warm, satisfying, and tastes like it simmered all day — but you can have it on the table in under 30 minutes!

A fuss-free, flavor-packed soup for any night of the week

Equipment You’ll Need:

  • Large pot or Dutch oven
  • Wooden spoon or spatula
  • Ladle

Ingredients:

  • 1 lb ground beef (or ground turkey)
  • 1 packet dry onion soup mix
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) green beans, drained (optional but recommended!)
  • 4 cups beef broth (or vegetable broth)
  • 1/2 teaspoon black pepper
  • Optional toppings: shredded cheese, sour cream, crackers, crusty bread

Instructions:

  1.  Brown the meat: In a large pot over medium heat, brown the ground beef until fully cooked. Drain any excess grease.
  2.  Add remaining ingredients: Stir in onion soup mix, diced tomatoes, tomato sauce, corn, green beans, broth, and black pepper.
  3.  Simmer: Bring the soup to a gentle boil, then reduce heat and simmer for 15-20 minutes, stirring occasionally. The longer it simmers, the more the flavors meld.
  4.  Serve: Ladle into bowls and top with your favorite garnishes. Enjoy hot!

Extra Tips & Variations:

  • Swap the corn or green beans for mixed veggies or whatever you have on hand.
  • Add cooked pasta or rice for an extra-hearty version.
  • Spice it up with a pinch of red pepper flakes.
