Cornflake Jam Tart Recipe
Ingredients:
- 320g ready-rolled shortcrust pastry (or homemade pastry)
- Plain flour, for dusting
- 50g butter
- 125g golden syrup
- 25g light brown soft sugar
- 100g cornflakes
- 125g plum or strawberry jam
- Custard, ready to serve
Method:
Step 1: Prepare the Pastry
- Preheat the oven to 180C/160C fan/gas 4.
- Roll out the pastry on a lightly floured surface until it's large enough to fit a 23cm tart tin with a loose bottom.
- Lift the pastry over the tin with a rolling pin, pressing it into the corners and sides, leaving some overhanging pastry.
- Trim the excess, leaving a small amount hanging over the edge.
Step 2: Pre-Bake the Pastry
- Place baking paper around the pastry edges and fill with baking beans or raw rice.
- Bake for 15 minutes. Remove the parchment and beans, then bake for an additional 5-10 minutes until just golden.
- Remove from the oven and trim any excess pastry using a serrated knife.
Step 3: Prepare the Cornflake Mixture
- In a small pan with a pinch of salt, melt the butter and smooth out the sugar, syrup, and butter, stirring often.
- Add the cornflakes to the butter mixture, ensuring they are well coated.
Step 4: Assemble the Tart
- Spread the jam evenly over the cooked pastry base.
- Sprinkle the cornflake mixture on top of the jam, pressing down slightly to cover it completely.
Step 5: Final Bake
- Return the tart to the oven and bake for an additional 5 minutes or until the cornflakes are golden and toasty.
Step 6: Cool and Serve
- Allow the tart to cool down. Be cautious as the jam can become very hot.
