Low-carb, high-protein, cheesy roll-ups that deliver all the flavor of a classic Philly cheesesteak without the carbs.

 Ingredients

  • 2 cups shredded Monterey Jack cheese

  • 1 lb (16 oz) ground beef

  • ½ medium onion, thinly sliced

  • 1 bell pepper, thinly sliced (red, green, or yellow)

  • 1 tsp Worcestershire sauce

  • 4 oz cream cheese

 Equipment

  • Large skillet

  • Baking sheet

  • Parchment paper

  • Spatula

  • Knife and cutting board

 Instructions

1. Preheat the oven to 375°F (190°C). Line a large baking sheet with parchment paper.

2. Cook the beef: In a skillet over medium heat, brown the ground beef. Break it up into crumbles as it cooks. Drain off excess fat.

3. Add vegetables: Add sliced onion and bell pepper to the beef. Cook for 5–7 minutes, until softened.

4. Creamy goodness: Stir in Worcestershire sauce and cream cheese. Cook until the mixture is creamy and everything is combined. Remove from heat.

5. Bake the cheese base: Spread shredded Monterey Jack cheese into a 10x13 inch rectangle on the parchment-lined baking sheet. Bake for 5–8 minutes, or until melted and bubbly.

6. Cool & roll: Let cheese cool for 1–2 minutes until just firm but still pliable. Spread the beef mixture evenly over the cheese.

7. Roll it up: Starting from the long side, carefully roll up the cheese and filling into a log. Use the parchment to help roll tightly.

8. Slice & serve: Slice into 1–2 inch thick rolls. Serve immediately while warm and gooey!

 Tips & Variations

  • Don’t overbake the cheese! You want it flexible, not crispy.

  • Try pepper jack for added spice or provolone for a more traditional Philly taste.

  • Make ahead? Store uncut roll in the fridge, slice and reheat as needed.

  • Add mushrooms or hot peppers for even more depth and flavor.

 Storage

  • Fridge: Store leftovers in an airtight container for up to 3 days.

  • Reheat: Warm in a skillet or air fryer for 2–3 minutes until hot and crispy again.

  • Freezer: Wrap roll tightly before slicing and freeze for up to 1 month. Thaw and reheat when ready to serve.
