Ingredients
- 3 cups chopped yellow squash
- 1 (10.5 oz) can cream of chicken or cream of celery soup
- 1/2 cup diced celery
- 1/3 cup diced onion
- 1 stick (1/2 cup) butter, melted
- 3 large eggs, beaten
- 1/2 teaspoon poultry seasoning
- 1/4 teaspoon black pepper
- Pinch of salt
Instructions
1️⃣ Cook the Squash:
Bring a large pot of salted water to a boil. Add the chopped yellow squash and cook for 10–15 minutes, or until very tender. Drain well and mash with a fork or potato masher.
2️⃣ Mix the Ingredients:
In a large mixing bowl, stir together the mashed squash, cream of chicken or celery soup, celery, onion, melted butter, and beaten eggs. Add the poultry seasoning, black pepper, and pinch of salt. Mix until well combined.
3️⃣ Prepare to Bake:
Pour the mixture into a greased 9x13 inch baking dish and smooth out the top with a spatula.
4️⃣ Bake It:
Bake at 350°F (175°C) for 35–45 minutes, or until the top is lightly golden and the center is set.
