Southern Squash Dressing

A creamy, savory Southern-style side dish made with yellow squash, soup, and classic herbs.

Ingredients
  

  • 3 cups chopped yellow squash
  • 1 10.5 oz can cream of chicken or celery soup
  • 1/2 cup diced celery
  • 1/3 cup diced onion
  • 1/2 cup 1 stick butter, melted
  • 3 large eggs beaten
  • 1/2 tsp poultry seasoning
  • 1/4 tsp black pepper
  • Pinch of salt

Equipment

  • Large pot for boiling squash
  • Potato masher or fork
  • mixing bowl
  • whisk
  • 9×13-inch baking dish
  • Oven

Method
 

  1. Boil squash in salted water for 10–15 minutes until tender. Drain and mash.
  2. In a bowl, mix mashed squash, soup, celery, onion, butter, eggs, and seasonings.
  3. Pour mixture into a greased 9x13 baking dish.
  4. Bake at 350°F for 35–45 minutes until golden and set.
  5. Let cool slightly, then serve warm.

Notes

Substitute cream of celery for a vegetarian option.
Add crushed crackers or cornbread crumbs for a crunchy topping.
Can be assembled ahead and baked later.
