 Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan, or line it with parchment for easy release.
  2. In a large bowl, cream together the softened cream cheese and butter until smooth and fluffy.
  3. Add in the sugar and lemon zest, and beat until light and well combined.
  4. Mix in the eggs, one at a time, beating well after each.
  5. In a separate bowl, whisk together flour, salt, baking powder, and cinnamon.
  6. Alternate adding the dry ingredients and the milk into the cream cheese mixture, beginning and ending with the dry. Mix until just combined.
  7. Gently fold in the diced peaches using a spatula.
  8. Pour the batter into your prepared loaf pan and smooth the top.
  9. Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let the loaf cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
