Peaches & Cream Cheese Loaf

Moist, buttery loaf packed with sweet peaches and cream cheese. The perfect breakfast bread, snack, or fruity dessert.

Ingredients
  

  • - 8 oz cream cheese softened
  • - ½ cup unsalted butter softened
  • - 1½ cups granulated sugar
  • - ½ tbsp lemon zest
  • - 2 large eggs
  • - 2¼ cups all-purpose flour
  • - 1½ tsp salt
  • - 1 tbsp baking powder
  • - 1 tsp cinnamon optional
  • - 1 cup milk
  • - 1 15 oz can sliced peaches, drained and diced

Equipment

  • Stand mixer or hand mixer
  • Large mixing bowl
  • Measuring cups & spoons
  • Rubber spatula
  • Loaf pan (9x5-inch recommended)
  • cooling rack

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  2. Cream cream cheese and butter together until fluffy.
  3. Beat in sugar and lemon zest until light.
  4. Add eggs one at a time, mixing after each.
  5. In a separate bowl, combine flour, salt, baking powder, and cinnamon.
  6. Alternate adding dry ingredients and milk to the batter, mixing gently.
  7. Fold in diced peaches.
  8. Pour batter into prepared loaf pan and smooth top.
  9. Bake 50–55 minutes, or until toothpick comes out clean.
  10. Cool 10 minutes in pan, then remove and cool completely.
