My husband walked in from work, saw these cooling on the counter, and literally said, “What did I do to deserve you?”

I wasn’t even planning to make these tonight. But I had leftover crab from the weekend and a box of Cheddar Bay biscuit mix in the pantry, and something just clicked. What if I stuffed them? What if I made them actually special?

Best kitchen instinct I’ve ever had.

These golden, puffed-up biscuits come out of the oven like little treasure chests — buttery garlic crust on the outside with the most ridiculous creamy crab filling tucked inside. The biscuit is fluffy and cheesy, the crab is sweet and lightly seasoned, and that bright lemon butter sauce soaks into every bite, making the whole thing taste like you’re sitting at a fancy seafood restaurant.

Except you’re in your kitchen. In sweatpants. For a fraction of the price.

I made six. We had one left. My husband already asked if I’m making them again this weekend.

These stuffed Cheddar Bay biscuits are perfect for special dinners, date nights, holiday appetizers, or just because it’s Tuesday and you deserve something amazing. They look impressive but are surprisingly easy to throw together.

Ingredients

For the Biscuits:

  • 1 box Cheddar Bay Biscuit Mix
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Water or milk (as directed on the box)

For the Crab Filling:

  • 8 oz lump crab meat, drained and picked through
  • 2 oz cream cheese, softened
  • ¼ cup shredded cheddar cheese
  • 1 green onion, finely chopped
  • ½ tsp Old Bay seasoning
  • 1 clove garlic, minced
  • Salt and pepper, to taste

For the Lemon Butter Sauce:

  • 3 tbsp butter, melted
  • Juice of ½ lemon
  • 1 clove garlic, minced
  • Fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F and grease a muffin tin or line with parchment rounds.
  2. In a medium bowl, mix the crab meat, cream cheese, shredded cheddar, green onion, Old Bay seasoning, minced garlic, salt, and pepper until creamy and well combined. Set aside.
  3. Prepare the Cheddar Bay biscuit mix according to the package directions, stirring in the extra garlic powder and Italian seasoning before adding the liquid. Mix until just combined.
  4. Spoon about 2 tablespoons of biscuit dough into each muffin cup and gently press it up the sides to form a small cup.
  5. Add a generous spoonful of crab filling into the center of each biscuit cup.
  6. Top with another spoonful of biscuit dough, gently pressing the edges to seal (it doesn’t have to look perfect — they puff up beautifully).
  7. Bake for 18–22 minutes, until the tops are deeply golden and the edges are crispy.
  8. While the biscuits bake, whisk together the melted butter, lemon juice, minced garlic, and chopped parsley.
  9. As soon as the biscuits come out of the oven, brush them generously with the lemon butter sauce.
  10. Let them cool for a few minutes before serving (the filling will be hot!).

Serve warm with extra lemon butter on the side for dipping. They’re best enjoyed fresh from the oven.

  4. Press biscuit dough into muffin cups to form a base and sides.
  5. Add generous spoonful of crab filling.
  6. Top with more dough and gently seal edges.
  7. Bake 18–22 minutes until golden.
  8. Brush hot biscuits with lemon butter sauce.
  9. Cool slightly before serving.

Notes

Make-ahead: Prepare filling and dough in advance. Assemble and bake just before serving.
Storage: Best eaten fresh. Leftovers can be refrigerated and reheated in a 350°F oven.
