- 3 medium zucchini cubed
- Olive oil spray
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ¼ cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley chopped (optional garnish)
Wash and cube zucchini into bite-sized pieces.
In a bowl, lightly spray zucchini cubes with olive oil spray, then toss with Italian seasoning, garlic powder, salt, and pepper.
Preheat air fryer to 400°F (200°C). Arrange zucchini in a single layer in air fryer basket. Cook for 8–10 minutes, shaking halfway through.
Sprinkle Parmesan cheese over zucchini during the final 2 minutes and cook until melted and golden.
