Ingredients
  

  • 3 medium zucchini cubed
  • Olive oil spray
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley chopped (optional garnish)

Instructions
 

  • Wash and cube zucchini into bite-sized pieces.
  • In a bowl, lightly spray zucchini cubes with olive oil spray, then toss with Italian seasoning, garlic powder, salt, and pepper.
  • Preheat air fryer to 400°F (200°C). Arrange zucchini in a single layer in air fryer basket. Cook for 8–10 minutes, shaking halfway through.
  • Sprinkle Parmesan cheese over zucchini during the final 2 minutes and cook until melted and golden.
  • Garnish with fresh parsley, serve immediately, and enjoy!

Serve right away for the best texture and flavor.
Store leftovers refrigerated and reheat in air fryer or oven to restore crispiness.
