Amish Snow Day Soup

Creamy, hearty, and made for cold winter days — this Amish classic combines chicken, noodles, and vegetables in a rich, comforting broth.

Ingredients
  

  • 2 tbsp butter
  • 1 onion chopped
  • 2 cloves garlic minced
  • 3 carrots sliced
  • 2 celery stalks chopped
  • 2 potatoes diced
  • 4 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1 cup egg noodles
  • 1 cup milk or half-and-half
  • 2 tbsp flour
  • 1 tsp parsley
  • Salt & pepper to taste
  • Optional ½ tsp thyme or poultry seasoning

Equipment

  • Large soup pot or Dutch oven
  • Wooden spoon
  • Knife and cutting board
  • Measuring cups and spoons
  • whisk
  • Ladle

Method
 

  1. Melt butter; sauté onion, carrots, and celery until soft.
  2. Add garlic and cook 30 seconds.
  3. Pour in broth and potatoes; simmer 10–12 mins until tender.
  4. Stir in chicken and noodles; cook 8–10 mins more.
  5. Whisk flour and milk, add to pot, and simmer until thickened.
  6. Season, garnish, and serve warm.

Notes

Serve with buttery rolls, cornbread, or a slice of Amish friendship bread for a cozy winter meal
