Ingredients
  

  • 2 cups all-purpose flour
  • teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup unsalted butter softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 2 apples diced
  • ½ cup walnuts or pecans optional

Method
 

  1. Preheat oven to 350°F. Grease a cake pan.
  2. Whisk together flour, baking powder, cinnamon, and salt.
  3. Cream butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.
  4. Alternate adding the dry ingredients and milk, beginning and ending with dry. Mix until just combined.
  5. Fold in diced apples and nuts (if using).
  6. Pour into prepared pan and bake 40–45 minutes, until a toothpick comes out clean.
  7. Cool in the pan 10–15 minutes, then turn out onto a rack. Slice and serve.

Notes

Use tart apples for best flavor and texture. Do not overmix the batter. Optional nuts add crunch. Cake keeps well and freezes for up to 2 months. Delicious plain, dusted with powdered sugar, or lightly glazed. Extra spice (nutmeg or allspice) can be added for more warmth.
