Ingredients
  

  • 1 lb ground beef or pork/turkey
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 2-3 roasted green chiles Hatch or poblano
  • 2 tomatoes diced
  • 1 large potato peeled & diced
  • ½ cup peas optional
  • ½ tsp cumin coriander, oregano
  • ¼ cup beef broth or water
  • 2 tbsp olive oil
  • Salt & pepper to taste

Equipment

  • Large skillet
  • Tongs for roasting chiles
  • Cutting board & knife

Method
 

  1. Roast chiles over an open flame or broiler, steam, peel, and chop.
  2. Brown beef in a skillet, remove and set aside.
  3. Sauté onions, garlic, and potatoes in olive oil.
  4. Return beef to skillet, add tomatoes, chiles, peas, and spices.
  5. Simmer for 15-20 minutes until potatoes are tender.
  6. Serve with tortillas, rice, or beans.
