- Cook over medium heat, stirring constantly, until the mixture comes to a boil.
- Continue cooking until the mixture reaches 235°F (113°C), or passes the soft-ball test.
- Remove from the heat immediately.
- Stir in the vanilla, chopped pecans, and shredded coconut until everything is evenly coated and glossy.
- Working quickly, drop spoonfuls of the mixture onto the prepared parchment paper.
- Allow the cookies to cool completely for about 20 minutes, or until firm.
- Store in an airtight container at room temperature.
