Baked Blueberry Fritter Bites

Ingredients
  

  • Bites:
  • cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup granulated sugar
  • 1 large egg
  • ½ cup milk
  • 3 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • Glaze:
  • 1 cup powdered sugar
  • 2 –3 tablespoons milk
  • ½ teaspoon vanilla extract

Method
 

  1. Preheat oven to 375°F. Lightly grease a mini muffin tin.
  2. Whisk flour, baking powder, baking soda, salt, and sugar in a large bowl.
  3. In another bowl, whisk egg, milk, melted butter, and vanilla until smooth.
  4. Pour wet ingredients into dry and stir gently until just combined. Fold in blueberries carefully.
  5. Spoon batter into mini muffin cups, filling about three-quarters full.
  6. Bake 12–15 minutes until tops are golden and a toothpick comes out clean. Cool a few minutes, then transfer to a wire rack.
  7. Whisk glaze ingredients until smooth and pourable. Drizzle over warm bites and let set briefly. Serve warm.

Notes

Do not overmix the batter. Fold blueberries in gently. Glaze while warm for the best drip and finish. Fresh blueberries are ideal; frozen can be used without thawing. Best eaten the day they are made. Excellent for breakfast or dessert. Store leftovers in an airtight container. Consider a double batch—they disappear fast.
