Baked Mozzarella Onion Rings

Crispy baked onion rings stuffed with melty mozzarella. A lighter, oven-baked twist on classic onion rings and mozzarella sticks that is perfect for appetizers, game nights, or family dinners.

Ingredients
  

  • 2 large onions cut into ½-inch rings
  • 8 ounces mozzarella cheese cut into sticks
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Cooking spray

Equipment

  • Baking sheet, parchment paper, three shallow bowls

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Separate onion slices into rings. Place a mozzarella stick inside each ring (nest a second ring around it if needed).
  3. Set up a breading station: flour in one bowl, beaten eggs in another, and breadcrumbs mixed with garlic powder, paprika, salt, and pepper in the third.
  4. Dredge each stuffed ring in flour, then egg, then breadcrumbs, pressing to coat well.
  5. Arrange on the baking sheet and lightly spray with cooking spray.
  6. Bake 15–20 minutes until golden and crisp and the cheese is melted and bubbly.
  7. Cool a few minutes before serving with your favorite dipping sauce.

Notes

Use cold mozzarella for easier assembly. Press breadcrumbs firmly so the coating stays intact. Serve immediately for the best cheese pull. Panko breadcrumbs give extra crunch. Leftovers reheat best in the oven or air fryer.
