Banana Blueberry Oatmeal Breakfast Cookies

Ingredients
  

  • 2 ripe bananas
  • 1 cup rolled oats
  • ½ cup blueberries fresh or frozen
  • ¼ cup honey or maple syrup
  • 1 tsp vanilla extract
  • ½ tsp cinnamon optional
  • Pinch of salt

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mash bananas in a bowl until smooth.
  3. Stir in honey and vanilla.
  4. Mix in oats, cinnamon, and salt.
  5. Fold in blueberries gently.
  6. Scoop onto baking sheet, flatten slightly.
  7. Bake 15–20 minutes, until golden and set.
  8. Cool before serving.

Notes

Store at room temp (3 days), fridge (1 week), or freezer (3 months).
Add nuts, chocolate chips, or dried fruit for variety.
