Method
- Preheat oven to 400°F (200°C). Bake sweet potatoes 45–60 mins, peel, and mash.
- Cream butter and sugars until fluffy.
- Add sweet potatoes, milk, eggs, vanilla, and spices; mix until smooth.
- Pour filling into crust and smooth top.
- Reduce oven to 350°F (175°C); bake 50–60 mins or until center is set.
- Cool 2–3 hours before slicing. Serve with whipped cream if desired.
Notes
Refrigerate covered up to 4 days. Bring to room temp before serving or enjoy cold.
