Ingredients
  

  • 4 thick-cut pork chops about 1 inch thick
  • 4 tablespoons packed brown sugar
  • 4 tablespoons unsalted butter
  • 1 tablespoon soy sauce
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Pat the pork chops dry and season generously with salt and pepper.
  2. Melt the butter in a large skillet over medium-high heat.
  3. Sear the pork chops for 4–5 minutes without moving them.
  4. Flip the pork chops.
  5. Sprinkle the brown sugar evenly over each chop.
  6. Drizzle the soy sauce around the skillet.
  7. Spoon the glaze over the pork chops while cooking for another 4–5 minutes.
  8. Cook until the internal temperature reaches 145°F (63°C).
  9. Rest the pork chops for 3 minutes.
  10. Spoon the remaining glaze over the top and serve immediately.

Notes

Thick-cut pork chops produce the juiciest results.
Do not overcook.
Let the pork rest before serving.
Baste often for a glossy caramelized glaze.
Excellent served with mashed potatoes or rice.
