Carrot Cake Cookies

Carrot Cake CookiesSoft, chewy cookies with the cozy taste of carrot cake!

Ingredients
  

  • 1 cup grated carrots
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup maple syrup
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Equipment

  • mixing bowl
  • Wooden spoon or spatula
  • Baking sheet
  • Parchment paper
  • Cookie scoop (or two spoons!)

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheet with parchment.
  2. Mix all ingredients in a large bowl until sticky.
  3. Scoop onto baking sheet, flatten slightly.
  4. Bake 12-15 min until edges are golden.
  5. Cool before serving.

Notes

Try with cranberries or coconut for a twist.
Great for snacks or light dessert!
