Method
- Preheat oven to 375°F. Line and prep jelly roll pan.
- Mix dry ingredients.
- Beat eggs + sugar 5 minutes until fluffy. Add vanilla.
- Fold in dry mix, carrots, walnuts.
- Bake 12–15 minutes until springy.
- Invert onto sugared towel. Roll up while hot. Cool.
- Beat frosting ingredients until smooth.
- Unroll cake, spread frosting, roll again.
- Chill 30 minutes. Dust with sugar, slice, serve.
Notes
Store in fridge up to 3 days.
Freezes well for up to 2 months.
