Cheddar-Stuffed Meatloaf Muffins

Individual cheddar-stuffed meatloaf muffins with a gooey cheese center and caramelized edges. Easy, portion-controlled comfort food that reheats beautifully.

Ingredients
  

  • 1 lb ground beef
  • 1 cup breadcrumbs
  • 1 egg
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste
  • cup ketchup plus extra for topping
  • 1 tbsp brown sugar optional

  • Muffin tin, mixing bowl

Method
 

  1. Preheat oven to 375°F and grease a muffin tin.
  2. Gently mix ground beef, breadcrumbs, egg, milk, garlic powder, onion powder, salt, and pepper.
  3. Press a layer of meat into each muffin cup, add a pinch of cheddar, then seal with more meat.
  4. Mix ketchup with brown sugar (if using) and brush over the tops.
  5. Bake 20–25 minutes until cooked through and golden.
  6. Cool a few minutes in the pan before removing. Serve warm.

Notes

Mix the meat gently to keep the muffins tender. Seal the cheese well. These reheat and freeze excellently. Double the batch for easy future meals. Optional brown sugar adds a touch of sweetness to the glaze. Great for busy weeknights and meal prep.
