Cheesy Baked Yellow Squash Rounds: A Crispy, Gooey, Healthy Side Dish

Ingredients
  

  • * 2 medium yellow squash
  • * 1 tbsp olive oil
  • * 1/2 tsp garlic powder
  • * 1/2 tsp Italian seasoning
  • * Salt and black pepper to taste
  • * 1 cup shredded mozzarella cheese
  • * 1/4 cup grated Parmesan cheese
  • * Optional: fresh parsley or red pepper flakes for garnish

Equipment

  • Sharp knife and cutting board
  • Large mixing bowl
  • Baking sheet
  • Parchment paper
  • Measuring spoons

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Slice yellow squash into 1/4-inch rounds.
  3. Toss slices with olive oil, garlic powder, Italian seasoning, salt, and pepper.
  4. Arrange slices on a parchment-lined baking sheet.
  5. Sprinkle each round with mozzarella and Parmesan cheese.
  6. Bake for 20–25 minutes until cheese is bubbly and golden.
  7. Garnish with parsley or red pepper flakes, if desired. Serve hot.

Notes

* Add cayenne for heat.
* Swap mozzarella for cheddar or Italian cheese blends.
* Naturally gluten-free.
* Prep ahead by seasoning squash before baking.
