Cheesy Chicken Fritters –

Easy cheesy chicken fritters made with chopped chicken breast, mozzarella, fresh herbs, and almond flour. Pan-fried until golden and crisp with a juicy, melty interior.

Ingredients
  

  • 1 ½ lbs boneless skinless chicken breast
  • 2 medium eggs
  • cup almond flour
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons fresh basil chopped
  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons fresh chives chopped
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste

  • Large mixing bowl, large skillet, spatula

Method
 

  1. Slice and chop the chicken into small, thin bite-size pieces.
  2. In a large bowl, combine chicken, eggs, almond flour, mozzarella, basil, parsley, chives, garlic powder, salt, and pepper. Mix thoroughly.
  3. Heat olive oil in a large skillet over medium heat.
  4. Spoon portions of the mixture into the skillet and gently press to an even thickness.
  5. Cook until golden and firm enough to flip, then turn and cook the second side until golden and the center reaches 165°F.
  6. Serve warm with dipping sauce or sides of choice.

Notes

Keep fritters relatively thin and even for consistent cooking. Do not overcrowd the pan. Fresh herbs give the best flavor. Excellent with ranch, aioli, or a simple green salad.
