- Brown the ground beef in a large pot; season with salt and pepper. Remove and set aside.
- Melt butter in the same pot; sauté onion until soft (about 4 minutes). Add garlic and cook 30 seconds.
- Sprinkle in flour and stir for 1 minute. Slowly add beef broth while stirring. Add potatoes.
- Bring to a gentle boil, then simmer until potatoes are fork-tender (about 15 minutes).
- Return beef to the pot. Stir in milk and warm through 2–3 minutes.
- Remove from heat; stir in cheddar until melted and smooth. Adjust seasoning.
- Ladle into bowls, garnish with parsley, and serve hot.
Notes
Dice potatoes evenly. Cook the flour fully to avoid a raw taste. Remove from heat before adding cheese for the smoothest texture. Soup thickens as it sits—thin with broth or milk when reheating. Excellent with crusty bread. Leftovers keep well for several days. Freshly shredded cheese melts best.
