- Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
- Brown ground beef and onion in skillet. Drain grease, add garlic, cook 1 more min.
- In dish, mix rice, beef mixture, tomatoes, soup, broth, Italian seasoning, veggies, and 1 cup cheese. Stir well.
- Cover tightly with foil, bake 30 minutes.
- Remove foil, stir, sprinkle remaining cheese on top. Bake uncovered 15-20 minutes.
- Rest 5-10 minutes before serving.

Foil is essential — traps steam so rice cooks properly.
Crunchy rice? Add ¼ cup broth, cover again, and bake 10 extra minutes.

Make it creamy — stir in sour cream at the end before topping with cheese.
