Ingredients
  

  • pounds ground beef
  • 1 yellow onion finely diced
  • 4 pounds russet potatoes peeled and sliced ¼-inch thick
  • 2 cups freshly grated cheddar cheese
  • 1 can 10.75 oz condensed cheddar soup
  • 1 can 12 oz evaporated milk
  • ½ cup whole milk
  • ½ teaspoon garlic powder
  • Kosher salt to taste
  • Freshly ground black pepper to taste

Method
 

  1. Preheat oven to 350°F. Spray a 9x13-inch baking dish with nonstick spray.
  2. Brown ground beef with diced onion; season with salt and pepper. Drain excess fat.
  3. Layer one-quarter of the potato slices in the dish; season with salt and pepper. Top with one-quarter of the meat and one-quarter of the cheese. Repeat layers three more times, ending with cheese.
  4. Whisk together cheddar soup, evaporated milk, whole milk, and garlic powder until smooth. Pour evenly over the casserole.
  5. Cover tightly with foil and bake 60 minutes. Uncover and bake 15 more minutes until golden and bubbling.
  6. Rest 10–15 minutes before serving.

Notes

Slice potatoes evenly for uniform cooking. Cover for the first hour so potatoes soften. Check doneness with a fork. Can be assembled ahead and refrigerated. Freshly grated cheese melts best. Leftovers reheat well. Adjust baking time if potato slices are thicker.
