Cherry Cheesecake Bars

Creamy cheesecake bars with a buttery graham cracker crust and a sweet-tart cherry topping. An easy, classic dessert perfect for holidays and gatherings.

Ingredients
  

  • cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter melted
  • 16 oz cream cheese softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 21 oz can cherry pie filling

  • 9×13-inch baking pan

  • Parchment paper

Method
 

  1. Preheat oven to 325°F and line pan with parchment paper.
  2. Mix crust ingredients and press into pan. Bake 10 minutes.
  3. Beat cream cheese until smooth; add sugar, eggs, and vanilla.
  4. Pour filling over crust and spread evenly.
  5. Top with cherry pie filling.
  6. Bake 35–40 minutes until set.
  7. Cool completely, then refrigerate at least 3 hours before slicing.

Notes

Always use room-temperature cream cheese
Chill fully for clean slices
Knife wipes between cuts improve presentation
Bars freeze well for up to 2 months
Works with any fruit pie filling
