Chicken Bacon Ranch Quesadillas

Crispy chicken bacon ranch quesadillas made with seasoned cheese, rotisserie or grilled chicken, and crumbled bacon. Golden, buttery, and ready in minutes.

Ingredients
  

  • 2 packages refrigerated grilled chicken strips or 2 cups shredded rotisserie chicken
  • 6 strips bacon cooked crispy and crumbled
  • 4 large soft flour tortillas
  • 2 cups shredded cheddar cheese or cheddar-jack blend
  • 1 packet ranch seasoning mix
  • ½ cup sour cream for topping
  • 2 tablespoons butter for cooking

  • Large skillet, spatula, mixing bowl

Method
 

  1. Chop chicken into bite-sized pieces; warm slightly if cold.
  2. Cook bacon until crispy and crumble.
  3. Toss shredded cheese with ranch seasoning until coated.
  4. Heat skillet over medium heat; melt a small pat of butter.
  5. Place tortilla in skillet. Add ranch cheese, chicken, and bacon to one half. Fold over.
  6. Cook 2–3 minutes until golden and crisp; flip and cook until cheese is melted.
  7. Repeat with remaining tortillas. Slice into wedges and serve with sour cream.

Notes

Mix ranch seasoning thoroughly into the cheese. Use medium heat for best browning and melting. Do not overfill. Best served immediately for maximum crispness.
