  • 2 pounds boneless skinless chicken breasts sliced into strips
  • 3 bell peppers red, yellow, and green, sliced
  • 1 medium onion sliced
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • Fresh cilantro chopped (optional)
  • Flour or corn tortillas for serving
  • Homemade Fajita Seasoning
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes optional

  • Large mixing bowl

Method
 

  1. Preheat the oven to 400°F (200°C) or preheat a grill to medium-high heat.
  2. In a large bowl, combine the chicken, sliced peppers, onion, olive oil, lime juice, and all the seasonings. Toss until evenly coated.
  3. Divide the mixture evenly among four large sheets of heavy-duty aluminum foil.
  4. Fold and crimp each packet tightly to seal.
  5. Place the packets on a baking sheet and bake for 25–30 minutes, or grill for 20–25 minutes, turning once halfway through.
  6. Carefully open the packets, allowing the hot steam to escape.
  7. Garnish with chopped cilantro and serve with warm tortillas and your favorite toppings.

Notes

Slice the chicken and vegetables evenly for consistent cooking.
Heavy-duty foil prevents leaks and tearing.
Chicken is fully cooked when it reaches 165°F (74°C).
Assemble the packets up to 24 hours in advance and refrigerate until ready to cook.
