A creamy, cheesy, veggie-packed chicken bake that’s low in carbs but full of comfort.

Ingredients
  

  • 6 thin-sliced chicken breasts
  • 1 small bag baby spinach
  • 1 large package sliced mushrooms
  • 1 container green onion cream cheese
  • 1/4 cup olive oil
  • 1/2 cup chicken broth
  • 8 oz shredded mozzarella
  • 1 dash pepper
  • 1 dash herb & garlic seasoning

Equipment

  • 9×13-inch baking dish
  • Large mixing bowl
  • whisk
  • Measuring cups and spoons
  • foil

Method
 

  1. Preheat oven to 375°F.
  2. Arrange chicken in baking dish. Top with spinach and mushrooms. Season.
  3. Whisk cream cheese, olive oil, and broth. Pour over dish.
  4. Cover with foil and bake 20 mins.
  5. Remove foil. Bake 20–25 mins. Add cheese; bake 10 mins more.
  6. Cool 10 mins before serving.

Notes

Great for meal prep.
Try with different cheeses or added veggies!
