Chocolate Coconut Balls

Sweet, chewy coconut centers coated in rich chocolate — a no-bake treat perfect for holidays, gifts, or anytime cravings.

Ingredients
  

  • 2 cups sweetened shredded coconut
  • ½ cup sweetened condensed milk
  • ¼ cup unsalted butter softened
  • ½ tsp vanilla extract
  • Pinch of salt
  • 8 oz semi-sweet chocolate
  • 1 tbsp coconut oil
  • Optional: extra shredded coconut for garnish

Equipment

Method
 

  1. Mix coconut, condensed milk, butter, vanilla, and salt until dough forms.
  2. Roll into 1-inch balls (20–24 total). Place on parchment-lined tray.
  3. Chill 30–60 minutes.
  4. Melt chocolate and coconut oil until smooth.
  5. Dip chilled coconut balls in chocolate, letting excess drip. Place back on tray.
  6. Garnish with shredded coconut if desired.
  7. Let set at room temp 30 minutes or fridge 10–15 minutes. Store in airtight container.

Notes

Add cocoa powder to filling for richer flavor.
Store up to 1 week in fridge or 1 month in freezer.
For gifts, place in mini liners for presentation.
