Method
- Wash all fruit. Chop strawberries and remove stems from currants.
- Add fruit and orange juice to a saucepan. Cook over medium heat for 10 minutes until softened.
- Stir in sugar, cinnamon, cloves, and nutmeg. Bring to a boil, then simmer 15–20 minutes, stirring often.
- Test for doneness by placing a spoonful on a chilled plate. If it wrinkles when pushed, it’s ready.
- Remove from heat and stir in vanilla extract.
- Spoon into sterilized jars. Seal and refrigerate for up to 3 weeks.
Notes
Adjust sweetness to taste. Add ginger or cardamom for more spice. Use an immersion blender for smoother texture.
