- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Whisk together the flour, baking soda, salt, cinnamon, and instant coffee.
- Cream the butter and brown sugar until light and fluffy.
- Beat in the egg and vanilla until smooth.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Combine the granulated sugar with an extra pinch of cinnamon.
- Scoop tablespoon-sized portions of dough and roll into balls.
- Coat each dough ball generously in the cinnamon-sugar mixture.
- Arrange the dough balls 2 inches apart on the prepared baking sheet.
- Bake for 10 to 12 minutes until the edges are set and the tops are crackled.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
