Ingredients

  • Muffins:
  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • ½ cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Cinnamon Swirl:
  • ½ cup brown sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons melted butter
  • Glaze:
  • 1 cup powdered sugar
  • 2 –3 tablespoons milk
  • ½ teaspoon vanilla extract

Equipment

  • Muffin tin, mixing bowls, whisk, spatula

Method

  1. Preheat oven to 375°F. Line or grease a muffin tin.
  2. Whisk flour, sugar, baking powder, and salt. In another bowl, whisk milk, melted butter, eggs, and vanilla. Combine wet and dry until just mixed.
  3. Mix brown sugar, cinnamon, and melted butter into a thick paste.
  4. Fill cups halfway with batter, add cinnamon mixture, swirl; top with remaining batter and swirl again.
  5. Bake 18–22 minutes until golden and a toothpick comes out clean.
  6. Whisk glaze ingredients until smooth. Drizzle over warm muffins.
  7. Serve warm.

Notes

Do not overmix the batter. Keep the cinnamon swirl thick for distinct ribbons. Glaze while warm so it soaks in slightly. Best the day they are made. Excellent for brunch or freezing. Liners make removal easy. Adjust glaze consistency with milk as needed.
