Ingredients
  

  • Cake
  • 3 cups granulated sugar
  • 3 cups all-purpose flour
  • 5 large eggs
  • 3 sticks unsalted butter softened
  • ¾ cup 7UP
  • 2 tablespoons lemon extract
  • Lemon Glaze
  • 2 cups powdered sugar
  • 2 –3 tablespoons 7UP
  • 1 teaspoon lemon extract

Method
 

  1. Preheat oven to 325°F and grease a Bundt pan.
  2. Cream butter and sugar until fluffy.
  3. Add eggs one at a time.
  4. Alternate flour and 7UP.
  5. Stir in lemon extract.
  6. Bake for 75 minutes.
  7. Cool for 15 minutes and invert.
  8. Whisk glaze ingredients together.
  9. Drizzle glaze over cooled cake.
  10. Slice and serve.

Notes

Use room-temperature ingredients.
Do not overmix after adding flour.
Excellent make-ahead dessert.
Freeze for up to 3 months.
Delicious served with berries, whipped cream, or coffee.
