- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream butter and sugars until fluffy.
- Beat in eggs one at a time, then stir in vanilla.
- In a separate bowl, whisk flour, baking soda, cinnamon, salt, and nutmeg.
- Gradually mix dry ingredients into wet ingredients.
- Stir in oats.
- Drop dough onto baking sheets by rounded tablespoons.
- Bake 8–10 minutes until edges are golden and centers are soft.
- Cool on sheets briefly, then transfer to wire racks.
Notes
Add raisins or chocolate chips for variation.
Do not overbake—cookies continue to cook while cooling.
