Classic Chewy Oatmeal Cookies

Soft, chewy, and spiced to perfection—these oatmeal cookies are a warm, nostalgic treat made with simple ingredients and big comfort.

Ingredients
  

  • 1 cup 2 sticks unsalted butter, softened
  • 1 ½ cups packed light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp salt
  • ¼ tsp nutmeg
  • 3 cups old-fashioned rolled oats

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream butter and sugars until fluffy.
  3. Beat in eggs one at a time, then stir in vanilla.
  4. In a separate bowl, whisk flour, baking soda, cinnamon, salt, and nutmeg.
  5. Gradually mix dry ingredients into wet ingredients.
  6. Stir in oats.
  7. Drop dough onto baking sheets by rounded tablespoons.
  8. Bake 8–10 minutes until edges are golden and centers are soft.
  9. Cool on sheets briefly, then transfer to wire racks.

Notes

Add raisins or chocolate chips for variation.
Do not overbake—cookies continue to cook while cooling.
Freeze dough balls to bake fresh anytime!
