- Melt butter. Cook onion and celery until soft.
- Stir in flour and cook 2 minutes.
- Slowly whisk in milk and cream. Cook until thickened.
- Add crab, sherry, Old Bay, and paprika. Warm gently.
- Season with salt and white pepper.
- Garnish and serve warm.

Do not boil after adding crab.
