- Melt butter in a large pot over medium heat until nutty and rich.
- Add onion and celery; cook until completely soft and melting, about 8 minutes.
- Sprinkle in flour and stir constantly for 2 minutes until toasty.
- Slowly whisk in milk and cream. Simmer gently until thickened enough to coat a spoon.
- Gently fold in crabmeat, Old Bay, and cayenne. Simmer very gently for 10 minutes.
- Stir in sherry. Taste and season with salt and pepper.
- Ladle into bowls and garnish with chives and paprika. Serve hot.
Notes
Take time to fully soften the onion and celery—this builds the flavor base. Fold crab carefully to keep lumps intact. Add sherry at the end for the brightest flavor. Soup is best served fresh but can be made ahead and reheated gently. Avoid boiling once dairy and crab are added.
