Classic Depression Cake (Wacky Cake) — Moist, Eggless Chocolate Cake from Grandma’s Era

Ingredients
  

  • cups all-purpose flour or gluten-free flour
  • 1 cup granulated sugar
  • 3 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon white vinegar
  • 5 tablespoons vegetable oil
  • 1 cup water

Equipment

  • 8×8-inch baking pan
  • Mixing bowl or use the baking pan for mixing
  • Whisk or fork
  • Measuring cups and spoons

Method
 

  1. Preheat oven to 350°F (175°C). Grease an 8x8-inch pan.
  2. In pan or bowl, mix flour, sugar, cocoa, baking soda, and salt.
  3. Make three wells; add vanilla, vinegar, and oil.
  4. Pour water over all; mix until smooth.
  5. Bake 30–35 minutes until toothpick comes out clean.
  6. Cool completely before slicing and serving.

Notes

Dust with powdered sugar or frost as desired.
Store covered at room temperature up to 3 days.
Vegan and gluten-free adaptations possible.
