Ingredients
  

For the Patties:
  • 1 ½ pounds ground beef 80/20
  • 1 large egg
  • ½ cup plain breadcrumbs
  • ¼ cup finely chopped yellow onion
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil for cooking
For the Gravy:
  • 1 tablespoon olive oil or drippings
  • 1 large yellow onion thinly sliced
  • 8 ounces cremini mushrooms sliced
  • 2 cloves garlic minced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon dried thyme
  • Salt and black pepper to taste
  • Optional: 1 tablespoon heavy cream or butter

Equipment

  • Large mixing bowl
  • Skillet or frying pan (preferably cast iron or non-stick)

  • Measuring spoons and cups

Method
 

  1. In a bowl, combine ground beef, egg, breadcrumbs, onion, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix gently. Form into 6-8 patties.
  2. Heat olive oil in skillet over medium-high heat. Cook patties 4-5 minutes per side until browned. Remove and set aside. Drain excess fat, leaving 1 tablespoon.
  3. Add remaining oil/drippings. Sauté onions 5-7 minutes until softened. Add mushrooms; cook 5-7 minutes until browned. Stir in garlic; cook 1 minute.
  4. Sprinkle flour over veggies; cook 1-2 minutes. Whisk in beef broth, Worcestershire sauce, and thyme. Simmer until thickened.
  5. Return patties to skillet. Simmer covered 10-15 minutes until cooked through and gravy thickens.
  6. Stir in cream or butter if using. Season to taste. Serve hot over mashed potatoes or noodles.

Notes

Use 80/20 beef for best flavor.
Don’t overmix patties for tenderness.
Try gluten-free breadcrumbs for gluten sensitivity.
Leftovers freeze well for meal prep.
