Ingredients
  

  • 6 large egg whites room temperature
  • ½ cup granulated sugar
  • ¼ cup all-purpose flour sifted
  • 1 tsp vanilla extract
  • ¼ tsp cream of tartar
  • Pinch of salt
  • Optional Topping:
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • Fresh fruit berries, kiwi, or peaches

Equipment

  • Refrigerate leftovers up to 3 days. Best served fresh.
  • 8-inch springform pan
  • Electric hand or stand mixer
  • Rubber spatula
  • Fine mesh sieve (for flour)
  • Parchment paper
  • mixing bowls

Method
 

  1. Preheat oven to 325°F (160°C). Line pan bottom with parchment paper (no greasing).
  2. Beat egg whites with salt and cream of tartar until soft peaks form.
  3. Gradually add sugar; beat until stiff, glossy peaks form.
  4. Sift flour over the egg whites and gently fold in with vanilla.
  5. Pour into pan, smooth top, and bake 25–30 minutes until lightly golden.
  6. Cool completely in pan before removing.
  7. Top with whipped cream and fresh fruit before serving.

Notes

Refrigerate leftovers up to 3 days. Best served fresh.
