Coca-Cola Chocolate Cake

Ingredients
  

  • Cake
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 3 tablespoons cocoa powder
  • 1 cup Coca-Cola
  • ½ cup oil
  • ½ cup buttermilk
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ½ cup butter
  • Frosting
  • ½ cup butter
  • 3 tablespoons cocoa powder
  • 6 tablespoons Coca-Cola
  • 1 pound powdered sugar about 4 cups
  • 1 teaspoon vanilla extract
  • Optional: chocolate shavings or sprinkles

  • 9x13-inch pan, saucepans

Method
 

  1. Preheat oven to 350°F. Grease and flour a 9x13 pan.
  2. Whisk flour and sugar in a large bowl.
  3. In a saucepan, bring butter, oil, cocoa, and 1 cup Coca-Cola to a boil. Pour over flour mixture and stir until smooth.
  4. Add buttermilk, eggs, baking soda, and vanilla; mix until silky.
  5. Pour into pan and bake 30–35 minutes, until a toothpick shows a few moist crumbs.
  6. For frosting: bring butter, cocoa, and 6 tablespoons Coca-Cola to a boil. Remove from heat; whisk in powdered sugar and vanilla until glossy.
  7. Pour frosting over the warm cake. Cool until set enough to slice.

Notes

Use regular (not diet) Coca-Cola. Pour frosting over the warm cake for the best fudgy layer. Do not overbake. Store covered to maintain moisture. Excellent for potlucks and birthdays.
