Ingredients
  

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • ½ cup milk
  • ½ teaspoon black pepper freshly cracked preferred
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Salt to taste

Method
 

  1. Melt butter in a medium saucepan over medium heat until foaming.
  2. Whisk in flour and cook 2 minutes, stirring constantly, until light golden and toasty.
  3. Slowly pour in chicken broth while whisking to prevent lumps. Cook until it begins to thicken.
  4. Add milk, black pepper, garlic powder, and onion powder. Whisk until smooth.
  5. Simmer gently 3–4 minutes until the gravy coats the back of a spoon.
  6. Taste and add salt if needed. Serve hot.

Notes

Cook the roux fully to avoid a floury taste. Whisk constantly when adding liquid for a smooth texture. Freshly cracked black pepper gives the best flavor and appearance. Gravy thickens as it cools—adjust with extra broth or milk if needed. Excellent over mashed potatoes, biscuits, chicken, or rice. Best made fresh but reheats well with a whisk and a splash of liquid.
