Cornflake Chocolate Clusters

Easy no-bake cornflake chocolate clusters with a peanut-butter-honey base and smooth milk chocolate coating. Crunchy, sweet, salty, and dangerously addictive.

Ingredients
  

  • 3 cups cornflakes whole
  • 1 cup creamy peanut butter
  • ½ cup honey or light corn syrup
  • ¼ cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups milk chocolate chips
  • 1 tablespoon coconut oil optional

Equipment

  • Saucepan, mixing bowl, baking sheet, parchment paper

Method
 

  1. Place cornflakes in a large bowl.
  2. Heat peanut butter, honey, and sugar in a saucepan, stirring until it just begins to bubble. Remove from heat and stir in vanilla.
  3. Pour over cornflakes and gently fold until coated.
  4. Drop spoonfuls onto a parchment-lined sheet and let firm up 15 minutes.
  5. Melt chocolate chips with coconut oil until smooth. Dip or drizzle clusters.
  6. Let chocolate set completely before storing.

Notes

Keep cornflakes as whole as possible for best crunch. Remove peanut-butter mixture from heat as soon as it bubbles. Coconut oil is optional but improves chocolate texture. Store in an airtight container. Excellent for gifting, potlucks, and bake sales. They disappear fast.
