- In a large skillet or Dutch oven over medium heat, cook chopped bacon until crispy. Remove with a slotted spoon; leave drippings in the pan.
- Add onion and cook until translucent, 5–6 minutes. Stir in garlic and cook 1 minute.
- Add ground beef and cook until browned, 6–8 minutes. Return bacon to the pan.
- Stir in undrained baked beans, drained kidney beans, cannellini beans, and black beans.
- Add brown sugar, apple cider vinegar, ketchup, and mustard. Mix well.
- Transfer to a slow cooker and cook on low 2 hours, or bake covered in a deep dish at 350°F for 1½ hours.
- Stir and serve hot.
Notes
Do not drain the baked beans. Applewood-smoked bacon adds excellent flavor. Beans improve with time—make ahead if possible. Use a deep dish; a standard 9×13 is often too shallow. Adjust sweetness or tang to taste.
