Crab Rangoon Egg Rolls

Ingredients
  

  • 2 8-oz packages cream cheese, softened
  • ½ lb fresh white cooked crabmeat flaked or finely diced
  • 3 green onions finely chopped
  • 1 –2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 8 –10 large egg roll wrappers
  • Vegetable canola, or peanut oil for frying
  • Water for sealing

Equipment

  • Food processor, heavy pot or Dutch oven, thermometer, tongs

Method
 

  1. In a food processor, combine cream cheese, Worcestershire, garlic powder, onion powder, and green onions. Pulse until smooth.
  2. Gently fold in the crab meat by hand.
  3. Place an egg roll wrapper in a diamond orientation. Add about 3 tablespoons filling across the center.
  4. Fold the bottom corner over the filling, tuck in the sides, and roll tightly. Seal the final corner with water.
  5. Heat 2 inches of oil to 375°F. Fry 2–3 egg rolls at a time for 1–2 minutes until golden and crispy, turning occasionally.
  6. Drain on a wire rack. Serve warm with sweet chili or duck sauce.

Notes

Soften cream cheese fully. Fold crab in by hand to keep texture. Maintain oil at 375°F. Fry in small batches. Assemble ahead and refrigerate or freeze uncooked. Best served hot and crisp. Sweet chili sauce is an excellent dip. Imitation or canned crab can be substituted if needed.
